I'm thinking of fitting the 8inxp with some corsair 333Mhz memory modules. If I were to bump the fsb to 166, would I have a dual 333Mhz system, instead of 266Mhz?
Is this the only way to OC the memory? Or is there another option?

yes, 166 gives you 333. The other way to overclock RAM is to reduce CAS level.
