I am going to build a gaming rig along this year but I have many doubts and my budget is around 800-900€, maybe somebody can give me peace of mind? I wan't to play 1080p 60FPS High-Ultra to the last games.

CASE: Zalman Z9 Neo (5 fans included)

CPU COOLER: Cryorig H7 (I've read it's better than the CM 212 EVO, for the same prize)

CPU: Intel I5 6500 3.2Ghz ( I won't overclock and I don't think the +0.3Ghz of the 6600K would make any difference, or it would?)

RAM: Corsair Vengeance LPX DDR4 16GB CL13 (maybe Kingston is better? I don't know. Maybe I'm ok with 8GB?)

GRAPHIC CARD: Gigabyte GeForce GTX 980 G1 Gaming 4GB GDDR5 (I will buy this when the new Pascal cards are out, I hope it will low its prize to 300-350. Or maybe I should go for a 1070? I choose Gigabyte because I think it has a better cooling system, do you recommend Asus or MSI?)

MOBO: Gigabyte H170-D3HP (At first I was going for an Asus H170 Pro Gaming, but I think it's all marketing and this is better, maybe? I like the Asus Maximus Hero VIII but it's too expensive)

PSU: Seasonic S12II-520W Bronze (Do I need more wats? I want a good tier PSU and I think this is one, but a 600+ wats one double the prize so... )

STORAGE:
Western Digital 3.5" 1TB SATA3 Caviar (Everybody recommend this)
Samsung 850 EVO SSD 250GB (Everybody recommend this)

If you like the Gigabyte just go for it,it's a good choice too.

The psu you chose isn't bad and if it fits your budget can you go for that too. It's just that if you put your pc to sleep alot it might give issues for shutting down,a protection will kick in then, this can be avoided by disabling the C6/7 states in the bios/uefi.
I don't know what else to recommend since not knowing a budget or place where you buy from.
If the 6600k isn't much more than the 6500 then get it, you might change your mind about overclocking and then you're gonna regret not getting the 6600k.
For RAM i think g.skill is the best manufacture and get 16 gigs of it your budget just allows, since it will make a difference in new games that need a lot of ram like gta v
For gpu the obvious choice is to wait for pascal and polaris as they'll pretty much double the performance you're getting for your money now.
i've personally had 2 asus mobos and both of them have broken under normal use first one being just 2 months old when breaking. now i've had a gigabyte board running my i5 4690k @ 4.8ghz just fine without any problems for soon a year, so i think getting gigabyte instead of asus is a pretty good decision.
Everything else in the build looks pretty solid.

stick with gigabyte as duel bios know alot of issues from asus atm i used my first gigabyte board the other night so impressed with it so much no issues easy to set up u dont need an unlocked processor as u end up stressing ur system to gain a few fps in certain games nothing much in it but with what u have is a go with it i recomend to go with what u have

If you take his advice use a Z170 motherboard with the 6600K.

It all looks fine to me.The psu doesn't support Haswell so doesn't support the low power states of this one either, might have to disable the C6/7 energy saving states in the bios/uefi to make sure it doesn't shut off when going into sleep state.

So I should go for a more modern PSU that supports Haswell? I'm a bit lost with PSUs and MOBOs. So Asus is having problems with their MOBOs? Then I will stick to Gigabyte. About the graphic card, what brand do you recommend? a lot of people recommend me MSI but it has low support in my country and I don't like their cooling solution.

go with asus with video cards i am using an asus card atm use msi after burner to tune after what i found out with asus gpu tweak is a buggy mess on haswell set up buy a new gen psu stick with antec evega as psus give ur self a buffer the higher the rating the more thermaly efficient they are i am using an antec 600w unit on a asus 650tigtx with gigabyte h81 combo with i3 running mean craps on i5s & i7s built for $630 nz its impressed me running 10pro no messing round with bios settings of anything no issues easiest fire up ever done 10mins to get a os loaded from boot
