Gaming or Workstation PC

I want to buy an optimized PC for the highest FPS in VR. I use it mainly for DCS: WORLD and Star Citizen.

I try to build a killer system, but budget smart as well:

I currently can't decide between a pure gaming rig like the Z370 + Intel 8086K that will sacrifice scalability and expandability like more GPU's, extra USB ports, RAID CPU connected NVMe SSD's.
The Z370 can support only X16 PCIe lanes and I'm afraid that X2 GTX 1080ti's will saturate the X8 connections then. And what will happen if I'll connect 2 M.2 drives in RAID?

Alternately I could get a workstation PC like the X299 chipset with a THREADRIPPER X1950 or a Core i9 with all the shebang and extra cores, but lose valuable FPS and paying a much higher price for this setup.

some benchmarks maybe, some SLI performance and utilization data and pricing maybe.

You don't need SLI 1080 ti's for DCS or Star Citizen (I run both those games smooth on high settings with a 4770K/16gb/1080 ti on my Oculus).

I could try to bench it with my system but the 4770k is much different then the 8700K so results may vary a bit (more in favor of the 8700K).

I've seen this video. Although I'd love to see some of your average fps in vr or just a regular screen with the gpu\cpu utulizations.

I'll try to get it up and running on VR but just a heads up, it's been forever since I played so I may not be able to fly so well.

Update, I am painfully horrible at DCS, especially using K/M since I have no joystick and the Touch controllers are useless. Is there another game I can show you? Maybe something like Elite Dangerous?
