[SOLVED] Gaming PC Build for about $1000

My wife told me today I could go and upgrade my PC because it has been about 5 years and I am starting to see some issues with my current build which is an AMD FX-8370 8 Core processor and NVidia GeForce GTX750ti graphics card. I also currently use two TV's for my screens. I do gaming and I work from home, and of course I like to watch movies. I plan to keep 1 TV and I want to get a 2k (1440p) monitor for my gaming. I want something that will last another 4-5 years and if it could do VR gaming, I would be willing to pay a little extra.

Notes:
  1. I live in the US.
  2. I am an amazon prime member and get 5% back everything I buy there, and it is tax free. So in essence buying on amazon saves me 13%.
  3. I don't mind using open box parts if they save money.
  4. I have 7 kids all 7 and under...this is my escape after they all go to bed so this PC will save my life, my sanity, and probably my marriage. :)

Preference:
  1. 144 hz capable
  2. VR ready
  3. Freesync Capable Monitor and Graphics Card (G Sync would be fine as well)
  4. AMD instead of Intel GPU unless matched with Optane Memory.
Don't Need:
  1. Hard Drive(s)
  2. Power Supply, I have a 725W X PLUS
  3. Case, It's not great, but its huge and under my desk and unseen. Therefore, I don't need any special lighting either. (Or do I have to have a new case?) Fits the ASUSTek 970 Pro gamin/AURA which is 12in x 9.6 in)
  4. Peripherals, mouse, keyboard

Unsure, but my best guess is this will run $100-$150.

Am I missing something? What should I change? Should I buy now or wait a few months (One website said March to June were awful times to buy because of tax returns I guess.) since I am not in a hurry?

There is an amazing deal on the AMD Ryzen 2700X right now. I'd probably opt for that.

That motherboard ships in 1 to 2 weeks would this be a good substitute? I read one review that said it takes more Memory to run. I will be honest I don't understand the difference other than this one is bigger and will fit more PCI slots or would you choose another one?

Thanks for your help Wolf. I was able to get everything I wanted for $855 and if I wanted to go with open box graphics card, I could have cut it down to almost $800. I don't even like counting the monitor against that cost because the monitor will last me for many years. So the meat only cost $600 and I can sell some of my old parts for a decent amount.
