How is this for a gaming only rig? How will this do for games like PUBG on medium/high settings, for example? Also, would it be worth it to upgrade to 2666 memory? My budget is around $1000.

Intel CPUs dont scale well with faster RAM. There wont be any real world difference between 2400mhz and 2666mhz.

Everything else looks fine, just know the 1060 is a 2 year old mid-range GPU. It will begin to show its age sooner rather than later. For now, it will handle games at medium/high settings at 1080p and get 60fps. But if you want longevity, spring for the 1070 as it will be better for longer.
