As the title says, what is the difference between these 3 mother boards?
I want to pair the mother board with a gtx 1070 and an intel i5 7600k if it makes any difference....
Where I live the k3 is a bit more expensive but not much of a difference to be honest.
Thanks in advance!

Among the differences in features, get the:

K3, if:
You want better Audio Codec, good LAN Controller esp. for gaming, will be needing around 5 fans, need 2x internal USB3.0 headers, don't need those Serial and Parallel ports, need all types of USB rear panel ports (USB3.1, 3.0 and 2.0), and like black+red motif with red LED lighting.

HD3, if:
Lower Audio Codec version but good LAN Controller, need a PCI slot, need 2x internal USB3.0...

I'm sorry, I really can't take much from this comparison, too many numbers and words I don't understand :) can you please eli5?
Like, overall, is there any significant difference?

First off, there's no Gigabyte Z270 "H3", so I am not sure if in the 2nd motherboard choices you listed, you are referring to the GA-Z270-HD3, or the GA-Z270X-UD3, or GA-Z270P-D3, or the GA-Z270M-D3H.

For reference:
This is the HD3: http://www.gigabyte.us/Motherboard/GA-Z270-HD3-rev-10#kf
This is the UD3: http://www.gigabyte.us/Motherboard/GA-Z270X-UD3-rev-10#kf
This is the D3: http://www.gigabyte.us/Motherboard/GA-Z270P-D3-rev-10#kf
This is the D3H: http://www.gigabyte.us/Motherboard/GA-Z270M-D3H-rev-10#kf
This is the K3: http://www.gigabyte.us/Motherboard/GA-Z270-Gaming-K3-rev-10#kf
This is the HD3P: http://www.gigabyte.com/Motherboard/GA-Z270-HD3P-rev-10#kf

All these Z270 Gigabyte motherboards (GA-Z270-Gaming K3, GA-Z270-HD3, GA-Z270X-UD3, GA-Z270P-D3, GA-Z270M-D3H, and GA-Z270-HD3P) have these common/same features:

All have the same chipset (Z270, obviously)
All have 4x DDR4 RAM slots (up to 64GB max. capacity) and same supported RAM speeds (up to 3866MHz OC)
All have at least two PCIe3.0 x16 Slots (at x16/x4 mode) that can support 2-Way AMD CrossFire
All have 1x M.2 Socket that can run either PCIe x4 or PCIe x2
All have 6x SATAIII 6Gb/s Ports that can support RAID 0, RAID 1, RAID 5, and RAID 10
All have 2x Internal USB2.0 (9-pin) Headers
All require a 24-pin ATX power cable and an 8-pin ATX12V power cable from your power supply unit
All have a Clear CMOS jumper (2-pin)
All have 2x 64 Mbit flash supporting DualBIOS

These are the main differences among motherboards (GA-Z270-Gaming K3, GA-Z270-HD3, GA-Z270X-UD3, GA-Z270P-D3, GA-Z270M-D3H, and GA-Z270-HD3P):

Yeah I meant the z270 hd3
So bottom line, which one should I get with this build? I currently plan to get the hd3p but If im making a mistake I can replace it with something else (The pc is not yet built). So z270 k3, z270 hd3, z270p-d3 or should I stick with the z270 hd3p?

D3, if:
Lower Audio Codec version and a mediocre LAN controller, need only one USB3.0 internal header and nothing more, need a Serial port but don't need a Parallel port, don't need any USB3.1 ports, and content with a 3x audio jack output (instead of 6x).

Stick with the HD3P, if:
Lower Audio Codec version but good LAN Controller, need two PCI slots, need 2x internal USB3.0 headers, need USB3.1 and USB3.0 rear ports (but not USB2.0).

If the K3 is not much expensive compared to the other motherboards, then, it offers the best features (unless you don't like the black+red motif).

Solution

Sorry for being such a newbie, but what are the audio codec versions and the LAN controller, and how will they affect me (or rather my pc performance)?

That was an unbelievable response. Respect.

Ended up getting the hd3p. No complains whatsoever.
