Is $4,999AUD a decent price for the following system? Trying to get my hands on a 3080 and prebuilt systems seem like the only way to do so.

Just wait it out a little bit. The cards will be more than readily available. I almost did the same thing here is the USA, looking at a few pre-built/build your own systems. But it is just not worth it - unless you are one of those people that just "have to have it first".
