Graphics card for my 3 year old x58 board?

I have Sabertooth X58 board running 2 x radeon 6870's with 1 gig of memory on each. Unfortunately, the game I play the most only uses one of them (EvE online). I also double box on triple monitors (3rd monitor for browsing and such). Currently things work pretty good, but I do feel things could improve substantially if I could increase my video memory with a newer and faster card.

My concern is that I do not want to invest in a card that is in anyway gimped by my old motherboard. I'd like a 4 gb card.

Any recommendations?

Games like EVE are more cpu heavy thatn graphical heavy.
Getting a newer cpu would be better
