Im looking at getting a MSI Gaming Z 2070 for my first build, powered by an EVGA G3 750w 80+ Gold psu. The graphics card needs an 8 pin power cable and a 6 pin power cable to work. As the power supply has 6 (6+2) 8 pin connectors, can I have the 8 pin on the graphics card filled with a (6+2) and the 6 pin port with just the 6 pin and leave the extra 2 pin dangling?

Yes that's how you would connect it.
