For a couple of years I have the GA mobo and I've been using the built in graphics.
Today I bought Geforce GT 730 (PCI-E 2.0, 2GB DDR3, 128 bit) and it won't work...

Motherboard: Gigabyte GA-H61M-S2PV version FE
Power supply: Corsair CX500M (500W)
Processor: Intel Core i5 3470

When it is connected, the built in graphics won't work. If I connect the screen to the GT it will freeze on the bios splash screen with no response to my keyboard (not usb keyboard).

Will appreciate any help!

I have the same motherboard rev 2.0.

Did you boot into the Bios directly and look in the screens there? On mine it shows the original bios version of FC dated 2-15-2012.
If you go into the Q Flash utility within the Bios it also lists the current bios and you can actually back it up to a flash stick or hard disk as well.

On mine it didn't actually work putting it to a hard disk but my flash stick worked.

The only way to increase the Bios version is to flash the bios, no getting around that at all.

I have been doing A LOT of reading and researching lately to decide on a new video card and it seems that the beta version bios dated earlier 2014 is the one you must update to for the 970 video cards. I am not entirely sure on that and...

According to gigabyte page of the mobo, both rev 2.0 and 2.1 has version fe. How can I know which one I have? The bios details wont say the rev number...
And besides flashing, is there another (preferably safe) way to update the bios version?

I am not entirely sure on that and I have a couple of questions into Gigabyte about that but from what I have been reading it seems that is the fix for these mobo's.

I check the PC part picker site before buying certain types of hardware to make sure it is actually compatible with my motherboard.

In most cases it is but it seems only for the version 2 and above for some hardware like video cards. Depends on the card.
If you want to double check you can also contact Gigabyte and see if they can tell you if it will work or not or possibly the hardware manufacturer for what ever it is you are looking to get.

I think the newest beta is version Fi, I have not flashed the bios as it also scares me even though these are suppose to have dual bios still hesitant. Let me know how it goes if you do because I have to go through the samething.

I ended up using @BIOS to update via web to latest version and it worked.
