I plan to game at 1440p. I'm likely going to use the Asus model of the cards, as they have better performance (although I heard Gigabyte could be better when overclocked).
So which would perform better, 2 1070's or a single 1080?

if u planning to game at 1440p just 1 1070 is more then enough if u have the money a 1080 is for 1440p to strong but if u dont care about the money probely 1070 sli bye a smal smal smal bit faster

I would personally go with a single 1080, you could always add a second one for sli later. With two 1070's, you may get some better performance now, but then your upgrade path later will likely be two 1080's or whatever other crazy boosted gpu nvidia releases (1080Ti, 1090?).

but to answer your question, from all the comparisons I've seen 2 1070's sli will perform better than a single 1080 most of the time. It gets more complicated based on which game (some dont have sli support) and dx11 vs dx12 and Vulkan, but check out the link below, it should give you some useful insight:

The performance boost in most games that I see with the SLI 1070s doesn't seem to be a significant difference. Considering it won't be hard to get the money for a second 1080, I think I'll go with the single card. Thanks for your help!

Good choice! No problem, happy to help :)
