Question Has my new MacBook from the store already been used ?

A few days ago, I received a new MacBook from the local computer store, and looking at the logs in the Console, I see that it recorded some things in the first month of this year, I also took a screenshot.

Take it back to the store and ask them to explain this.

On Apple's website, I entered the device's serial number, and the warranty starts from the day I first turned it on.

Well, a Windows install can do the same thing.

A fresh install on Jan 1, can show file dates from months earlier.

If your warranty starts from when you had it, no problem...ignore and move on.

As said, a regular Windows install will do the same thing.

Some file dates may be from before the OS was installed.
I'd be surprised if Apple was different.

Yes, and is the most likely reason there's activity on your computer logged before you even touched it.
