HDD Written / Read Bytes ?

Hy , how I can see the values for writes / reads from my hdd , for it's entire lifespan.

There isn't. The drive doesn't keep track of that information.

There are S.M.A.R.T parameters that monitor values of writes/reads.
But those parameters get populated only on SSD-s. HDD-s don't use them.
