After some conflicting data i found about that NAND temp should stay cool for longevity
most heatsinks and their recommendation cover the whole ssd (transfer the heat from the controller to the nand)
when installing the heatsink on the ssd should i remove the metal sticker and cover only the controller with thermal pad?
or is the fine that the heat transfers to the memory?

Don't remove the sticker, I made this mistake with my first NVME. They are made of copper to act as little heatsinks. Just put the heatsink straight on top of it. Writes are less damaging when the NAND is hot, you just don't need it running at extreme temperatures. I would cover the whole SSD with a thermal pad, not just the controller. Are you attaching a third party heatsink or one that comes with the motherboard?
