is it dangerous to switch out the 210w on a Lenovo thinkcentre to third party higher wattage (500w+) PSU?

It's safe if the connectors fit the right way with the required pinout and the PSU is of decent quality. Don't use some janky group regulated unit that lacks protection features.

Generally if the connectors are the same (pinouts, voltages, current per connection) you should be ok. The rating (in Watts) is how much the power the supply can produce / handle. (The 500Watt supply won't PUSH more power into the computer.) Do you have model #s of the power supplies?
