Help with gaming build

I'm thinking of going with the following build:

Intel Core i7-8700K
ASUS ROG Maximus X Hero (WiFi)
EVGA GeForce GTX 1080 Ti SC2 Gaming
Corsair Vengeance LPX 16GB (2x8GB) DDR4 DRAM 3200MHz
Seagate 3TB Barracuda SATA 6Gb/s 64MB Cache 3.5-Inch Internal Hard Drive
Crucial MX500 500GB 3D NAND SATA 2.5 Inch Internal SSD
EVGA Supernova 1000 G3, 80 Plus Gold 1000W

First question: Im in serious doubt when it comes to which case to use and cooling. Any suggestions? I dont care about aestethics and I want it be as quiet as possible.

Second question: Does the build make sense? Im worried I might be going too far in terms of power supply. Anything else I should worry about?

Third Question: how is the wifi and bluetooth on the ASUS ROG Maximus? is it worth the extra buck?

I want it to be VR compatible, 4K and I also do gaming which requires 100+ FPS.

You really cannot do gaming at 100fps+ at 4k with just 1 1080ti. I suggest going for 144hz 1440p monitors for 1080ti. The wifi on the motherboard just means that the motherboard includes a wireless network adapter and you don't have to go buy another one. For the power supply, you could probably drop as low as 750W without any problems. I would personally go for 850W. Don't worry about the VR, the gpu will definitely be compatible. Going for intel optane memory and taking away the ssd would help alot.
 
I would definitely suggest an SSD for that kind of hardware such as a 250gb samsung 970 evo for faster boot times and program load times. For the case, I would suggest the NZXT H700i or Fractal Design Meshify C, except the latter isn't quite as quiet. I do agree with gmmichaeljiang when he says that you won't be able to run 4k at 100+ FPS with just one 1080ti, so I would suggest either two 1080ti's in SLI or just 1440p which is still very smooth graphically.
