Not something you want to cheap out on and deal with later.
Molex to PCIe adapters do not use proper gauge wire to handle the 150w power draw on the 8 pin alone. This also does not account for the 6pin.
You also dont want the N1 power supply from EVGA: http://www.jonnyguru.com/modules.php?name=NDReviews&op=Story6&reid=436
Do not buy a molex adapter, especially not molex to 8 pin, its a great way to start a fire.
The only acceptable PCIe adapter is two 6 pin to 8 pin, thats it.

So would I would plug it in to my open molex slots
Yes . What is your current power supply? I would recommend a new power supply too! However if you dont wanna do all this work then an adapter will be fine but not as safe. With the adapter just dont do any overclocking.

Well you have 2 options. Adapter or PSU. I'd recommend PSU. It's $19.99

500w and 600w series EVGA = Poor quality , you want G2 or G3 series 550w.
It's all about pricing too! I've never had an issue with the EVGA 500W or 600W. They are great deals. I wouldn't run a 1070 on them but it's great for budget builds.
Buy a modular PSU unit at least 600w. I prefer gold standard. But a modular PSU should come with the cable you need. Silver-stone is a brand I highly recommend
