Home office network wiring

I've just had an office wired for work. I have 8 Ethernet wall sockets installed. These wires come out of the ceiling in one corner of the office and we're left hanging loose to be wired into the server cabinet - which I'm putting together myself. Two questions:

1. How can I identify which wire is for which port?

2. These wires will be going in to a patch panel. I was looking up the wiring diagrams and there look to be two standards 568A & 568B. Which of these should I use when wiring into the patch panel?

Any help or guidance greatly appreciated. Thanks

In 2017, any installer, even residential, that does not clearly label the cables on both ends does not deserve the description of "professional".

Only way you can determine is with a cable tester an another person on the other end.
For this use, even an inexpensive continuity tester would suffice. $10-$20 an Amazon.
