How accurate are the Asus temp sensors?

I have a P4P800 SE MB and I've had a few weird readings from the sensors
onboard. A couple of times my CPU sensor has jumped from about 48C to 89C
without anything being the obvious cause. Also my system sensor on the MB
once jumped to 120C from about 35C.

Is it something simple like a bit of dust getting into them or maybe the
software being buggy? Or are the sensors a bit iffy?

I would suggest comparing the BIOS hardware temp reading with ASUS Probe and
crosschecking it with Sandra and PC Wizard 2004 and Motherboard Monitor 5.
You should note that there will be a difference depending on whether the
core/diode or the socket temp is being measured (using MM5). I have noticed
that there is a 4-5C difference between the various readings. (Sorry, but
can't comment on the drastic jump other than to suggest that you watch for a
CPU fan/heatsink problem.)
