Question How do I find out what a Windows update changed on my PC?

I've been having massive stuttering issues in my game recordings in both OBS and Adrenalin. Last night I'm not sure what I did to correct the issue, but I was recording without any stuttering. However, overnight my PC restarted and I noticed through Windows update that there was an update to my defender antivirus. The only problem is that I can't uninstall that update to see if it is the cause of my video stuttering or not.
Any suggestions on what I can do to uninstall that update?

You could check and see if you can roll back to an earlier version in recovery.

Recovery is only showing me options to troubleshoot, reset or advanced startup. What would I choose?
Also, what is the best way to attach a screenshot? Do need to upload it to imgur or something like that?

Yes, you would need to host it elsewhere and link to here, or use something like Google Drive and make public and share the link. Imgur will show it here. Drive will show a link to click.
