how do you get strike-through in notepad on windows 10 probook

Windows Notepad is strictly ASCII. It does not do strikethrough.

In addition to @USAFret note: You can use eg Windows Write, it allows for different font settings (including bold, underline, etc). Make sure you store the file either in its native format (.wri), or in Microsoft Word' compatible .doc format, in order to preserve formatting.
