How does the Phanteks Enthoo Pro fare against other popular full tower cases?

1) NZXT Phantom 820
2) CM HAF-X
3) NZXT Switch 810

Also, can the Phanteks Enthoo Pro fit a Gigabyte GTX970 Windforce SLI and an NH D15 fan?

The Phanteks Enthoo series cases were designed with liquid cooling in mind. Ventilation and airflow are excellent so the cases are okay for an air cooled system too. All three Enthoo cases are large cases that can easily accommodate a GTX 970 and the Noctua NH-D15 cpu heatsink.

I would recommend the Enthoo Luxe over the Pro. The Luxe model is taller than the Pro. There is extra room in the top panel allowing the installation of a liquid cooling radiator with fans in a push / pull configuration without interfering with the motherboard. It might come in handy in the future.

The Phanteks Enthoo Pro is the best full tower until you hit the $150 mark. Then its the Enthoo Luxe. It has better features than the switch, is much better than the HAF-X overall, and offers more than the phantom 820 (basically the switch 810), for much cheaper.

The H440 and Define R4 are very different. All cases feature the same basic design, but the quality and innovation of what each case offers is what sets them apart. Especially when it comes to watercooling.
 
The Enthoo Pro is the best all around case in the 100$ and below range. It comes with features that most cases that cost more don't even have. The Enthoo Luxe is 50$ more and features a full aluminum body,LED system, and a 2nd SSD Bracket. For 50$ it's up to the buyer if it's worth it to them. If you use water cooling and want a more quiet case then the Fractal Design R4 and NZXT H440 are also a good choice. Phanteks has awesome customer service as well which makes the Enthoo and Luxe a even better choice.
