How fast and how much ram should I gite

1 x 16gb 2400 or 3200

Or

2x8gb 2400 or 3200

Gotta a i5 8600k and will be upgradeing to I 7 8700k with a Asus rog Stick motherboard

For gaming and general use, 16gb will be sufficient for the foreseeable future. If you are into productivity, content creation, rendering, etc, you might need 32gb down the line. On a dual channel board running dual channel is optimal.
So based, on the above analogies, you should get 2x8gb for now. If its a z370 chipset, 3200mhz can give some additional performance, specially if you are doing some RAM specific task. If its a b360/h370, then 2400 will do fine.

2x sticks so you can utilized double data rate. If you don't care about the price difference the 3200, though performance wise on an Intel build RAM speed does not net a huge performance difference.
