I plan on building a pc soon, and I really wonder how much space do I really need on an ssd, because I'm also buying an 2Tb hard drive.

Using ssd for gaming doesn't improve your gaming performance or fps.It just helps in loading the game very faster than hdd.
120gb ssd would be enough if you only put os in it
