Solution
A dot about 1/2 to 3/4 the size of a pea in the center of the die. Then spread it thin with the edge of something rigid (think something similar to a credit card). You only need enough to fill the microscopic pits and scratches in the two mating surfaces. More than that will act as an insulator.

Solution
You don't want to use more than necessary to fill the scratches and pits. Too thick will act as an insulator and cause more heat problems than it solves. You actually want the two surfaces to be touching, with nothing between them, for maximum heat transfer. Ideally both surfaces would be ground perfectly flat and polished to a perfect mirror surface, then there would be no call for any sort of compound to be applied.
