I have three different XP editions, XP Pro SP3, and both MCE 2005 and Tablet 2005 each with 2 discs, now here's my question.

Is there a hack or a method which allows you to install both MCE and Tablet over XP Pro, therefore you essentially have XP Ultimate, with all functionality available?

Similar question, how would you go about installing either Tablet 2005 or MCE 2005 over XP Pro SP3 given that they are older?

Thank you for your time, and please explain in detail.

There is no way to "combine" editions in Windows. Only Windows 8 and 10 have the add features control panel. You can't upgrade editions in XP either because Windows Anytime Upgrade was introduced in Vista. The best you could do is create separate partitions and install tablet and media center editions on different partitions. Media center and tablet editions are just glorified editions of Pro.
