To put it simple I want to record my gameplay but I use triple monitor 144hz so a capture card won't work unless supports 144hz

Reason is for file size I recorded for 5 hours and had 1tb and also for viewers I want it to record the standard 16:9 since that's probably what ppl are using anyways. also it takes a performance hit playing at that rez wile recording

Not stretch just crop it only record 1920x1080

I don't have three monitors but wouldn't it look weird to record only the middle screen?

Sure would

OBS will also let you downscale the resolution to 1080 if you want it to.

Recording file size can be adjusted by playing with recording quality.

You can try OBS since it's free:
https://obsproject.com/
And here's how to set it up for local recordings, start at the recommended crf 15, and lower it for higher quality and higher file size recordings.
https://obsproject.com/forum/resources/how-to-make-high-quality-local-recordings.16/
And to set it up for twitch:

After you try OBS can you report back because I'm thinking

A) changing 48:9 (I think) to 16:9 is going to look really smooshed
B) the performance hit for encoding from 5760*1080 to 1920*1080 won't be pretty
C) both A and B
D) neither

I could be wrong though

Derp, I'm stupid.

OBS will let the OP do what he originally intended, only capture a portion/sub-region of his screen.
Add a source, right click it and choose properties, enable sub region, click drag to select, and then drag it to only include your center monitor

I totally agree with you, 48:9 would look bad per every vertical pixel it would need 3 horizinal pixels
The performance would hit like a TRUCK

Yea some hud bars may be off the screen for viewers on some games but some have mods where you can change the location of the bars but basicly the side monitors basicly give you a little more viewing angle of a ultra wide then the rest of the screen is stretched depending on the game triple is nice because ppl can't sneak up on you... But for recording it might be odd that I move to atack something that they haven't seen yet... As of now I'm rec all three and crop it when I go it add the voice over and such
