I am buying a 240 GB SSD. Now I have read that we must only use 80% of the SSD space.

Now how to use this 80%? By allocating only 80% or By allocating 100% space and then never fill the disk above 80%.

Also, should Individual partition also be filled 80% or is it a full disk thing.

Solution
You don't need to leave any extra free unpartitioned space. TRIM function will take care of garbage collection over the existing free space in the active partition(s).
The 240GB SSD also have some factory over-provisioning, the actual value is 256GiB, because, after all, it's a memory.

Just don't fill it up too much. For a 240GB drive, just don't go over about 200GB for a safe buffer.
