How would I switch from quad to single?

to you question, in theory, yes you would need to do that, but you can't practically do that, because the gpu doesn't have 4 6/8 pin connectors to plug in those cables. but 40amps on 12v is more that enough for the 780ti :)
The benefits of single rails are, if you got a really power hungry gpu, the quad rails won't deliver enough power for the gpu, becuase you will most probably use only 1 rail on the gpu and 12*20 is 240 and if your gpu consumes like 300w, it wont be enough for only one rail of the quad rails.

I am not really aware of any benefits from quad rail to single rail tbh

you can't tell the gpu to use all rails, because, for example, you got a video card, which consumes 300w, you take 2 6+2pin pcie cables and plug them into the gpu. the problem is, those 2 6+2pin cables are from 1 rail, and you got 3 rails which are not giving any power to the gpu. I'd just recomment going with an single or dual rail PSU tbh

would it be fine with the above version since its overclocked? and also wouldnt i need to use all the VGA slots (on the PSU) to get the 60AMPS from all the 20AMP rails?
