I am looking to build a PC for tabletop gaming only, No video games.

It will need to have enough memory to run herolab, realmworks, and a web browser. I will also be running three monitors. (1) 22" flat screen monitor either hdmi or dvi, (1) 37" flat screen w/ hdmi inputs, and (1) projector with hdmi inputs. I want to go a little cheap on this one as it is not my main PC and will only be used on game night.

I am looking for recommendations on a intel based platform.

Not sure I quite understand, but I recommend something like these specs:

1) Intel G3258 CPU
2) 1150 socket motherboard (reasonable quality)
3) 4GB DDR3 memory (single stick of 1600MHz)
4) graphics card with three outputs supported at same time (will need to carefully verify which cards work)

5) Windows 10 64-bit Technical Preview ? (because it is free for several months and probably shouldn't have any major issues on a fresh install)

About my build:
If you don't need much for the GPU which you imply, you can just use the iGPU in the CPU for your needs. I had a different motherboard until I realized you'd want an HDMI output from the main board.

You should be able to run HDMI from a DVI connection with either an adapter or just buy a DVI to HDMI cable. There would be no sound but you can't run multiple sound outputs anyway so if you need HDMI audio do that from the motherboard output.

You'll need an addon card to drive another monitor (or two) and that's pretty cheap so I recommend a fanless HD6450 for that. So for about $300 this may suit your needs.

1-3 are about what I was thinking. My main concern is the monitors. I have never ran more than two. How do I verify if a card will support three monitors?

What is your budget on a gpu. I know the nvidia 660 supports 3 monitors. But depending on the board you may be able to get a budget 2 monitor card and run the 3rd monitor off the onboard. If you really don't need anything special graphically there's no reason to go buy a several hundred dollar card.

Are you going to be displaying the same thing on all 3 monitors/projectors? If so, you can get 3-way VGA splitters for cheap. If not, you are going to need a serious graphics card. I recommend something like a GTX760, because they're relatively cheap and drink slightly less power than their AMD counterparts.
