Once Win10 is booted, you can go to device manager, and disable the drive that contains Win7...(and/or, vice versa within Win7)

Unmount.
Either in Disk Management, or directly in File Explorer, or at the commandline.

Or, a front facing hotswap bay. Physical removal of the unwanted drive.
Some bays even have a switch to turn the desired drive off, without actual physical removal.

I added switches to a 5.25 bay, to turn off my backups (only connect when copying) Since win10 likes to play with disks. (I had two backups get a16MB partition for unknown reasons)
