I can't find a Mobo (LGA1151) that supports SLI

Cheapest 1151 board with SLI support on that site is the MSI Z170A SLI, however if you're on such a low budget I don't see how SLI support would be something you're looking for.

Cheapest 1151 board with SLI support on that site is the MSI Z170A SLI, however if you're on such a low budget I don't see how SLI support would be something you're looking for.

I see one, but it's an AM3+ socket.
Will AMD CPU's keep up with Intel's?

Far from it. Stay away from AMD these days. If your budget is fixed, get what Mr Kagouris suggested. If you can up it, get what i linked.

a i5 6500 is multiplier locked so it won't overclock.

The the Asrock will do just fine.
