I recently watched a video about how to overclock my cpu to 5ghz with the same specs or nearly the same specs and it seems to work but when i start a game it drops to 4.7ghz, im wondering if this is normal or if it should stay at a steady 5ghz.
i am btw new to overclocking so any tips and tricks would be great.

CPU: i5-8600k
GPU: GTX 1070
RAM: 16GB 2400MHZ
MTB: MSI Z370 GAMING CARBON PRO
PSU: 600 WATT
HDD: Seagate 2tb
SSD: KINGSTON 120GB

temps also seem to be fine at around 65-80 degrees celcious.

Okay, the overclock is not stable...and probably needs a higher vcore or higher LLC...I do not know how the MSI board BIOS works as I have a Gigabyte board. Hopefully someone can jump in or look for a thread on the forums for overclocking settings on the MSI board but see below for some help..

There are a lot of threads like this one but do look around as you will find some with good settings that you can use as a baseline:

1.56 ????? A you kidding ?

1.40 Risky, 1.45 under threat, 1.50 Ooops, 1.56, im surprised its not fried already !!!

According to Intel Datasheet for 8th gen CPU, MAX voltage should be 1.52 +- 0.2v. However for normal daily usage and your cooling, you should aim for no more than 1.45v if you are ballsy and around 1.4v if you like to play it safe. Personally, I always run them at around the edge since they have 3 year warranty.

If you need 1.56 to get to 5Ghz your CPU might last a week. May have already affected its lifespan.

Drop it to 1.35 and 4.6Ghz and start going up from there mate, 1.56 is waaaaaaaay too high bud :)

Out of curiosity do you know what temps you were getting before BSOD mate at 1.56v ? Hoping didnt get over TJunc

For reference, I keep my i7-8700K at 1.29v 4.8Ghz, unless i want to split cores the next step is 1.36v and 4.9Ghz, havent bothered trying to get to 5 as im not willing to go up into low 1.4x and couldnt get it stable at lower and the small gain is not worth the risk but everyone has there own parameters and level of risk, but none of them are at 1.56v unless they are on LN :)

Oh...As jay.wooster has said 1.56v is way, way too much. Most give an upper limit as 1.4v and me personally, I won't go over 1.35v for an overclock...You need to look at the threads for the base settings and then work from there..

He was using the settings frrom this MSI Youtube video which I believe was around 1.35v when the BSOD's started within Prime95 version 26.6 blend test...

The over protection should have kicked in and he should be fine...but stay on or below 1.4v max...

oh im so sorry, i said 1.56 but what i mean was 1.356

Boy, you scared the life out of me!!!! 1.356v is good, especially if it is now stable and within acceptable temps...

yeah, sorry for that.
i got scared too but then i checked my voltage and i saw that it wasnt 1.56.
