There are 3 categories.

N0on-modular - This are the least expensive category and it means that all PSU cables are "hard wired". Advantages are cost, increased efficiency, least possible failure points, lowest resistance... downside is all the cables you don't use are laying inside ya Case looking ugly and may impede air flow

Modular - This are the most expensive category and it means that all PSU no cables are "hard wired". Disadvantages are increased cost, lower efficiency, most possible failure points, highest resistance... upside is you don't have any unused cables inside the case cluttering things up.

Hybrid Modular - This is the proverbial...
In the simplest way of looking at it, "modular" means you get cable connectors that you can plug into the PSU. Thus, you can use only the cables you actually need. "Non-modular" simply means the cables are permanently connected to the PSU.

As far as PSU, look at some of EVGA's options. For a single GPU system, you won't need much (likely only 450-550W).

Hybrid Modular - This is the proverbial "best of both worlds" solution. All absolutely necessary cables are hard wired. For example, what is the possible advantage of having the 24 pin cable modular of every ingle possible build requires this cable. With a hybrid modular PSU, alll the cable you MUST use are hard wired gaining yotu a cost, efficiency, resistance advantage with 1 less potential failure point for each cable hard wired. Only the optional cables are modular so there will be no possible instance of unused cables sitting inside ya case.

One reason you would use a 100% full modular instead of a hybrid is when you are going to re-slevve all the cables for a custom build.
