I don't have a monitor currently picked out for the build, so if anyone has a good suggestion for a good monitor that'd be sick. I'm trying to keep the build under 1,000 USD (not including monitors and taxes and all that junk). I feel like I can do better in some areas of the build, specifically the CPU cooler and the RAM sticks,

That unit is not something I'd call a PSU.

You might want to pass on the PCPartPicker link to your build though you shouldn't be investing on the RTX2060, not in 2024. You should be looking at a dual channel DDR4-3600MHz kit.

why the Intel cpu over the AMD cpu? (sorry im not the most well versed with hardware and all that stuff, mostly a software person)

That Intel build would be better actually. Especially with the gpu in there. You could even swap in a 12600k and a cooler and still be right around 1000. The only issue with the amd am4 build is you wouldn’t have much upgrade path.

The performance is slightly better with the 12400. The motherboard supports i7 14700 with a bios update.

The B550 can support 5800X3D, but thats about it.
