A 64GB drive is right on the edge of what I consider 'too small'.
Christmastime, I build a new PC
Win 7 Home premium. After the OS install, Windows updates, a small set of utilities (~1GB), and MS Office (~3GB), used space was 47GB.
Given than you need to leave 10-15% free space on the SSD, that brings a 64GB drive down to ~50GB usable space.
47GB is right up against the edge of that. Now do another couple months of Windows updates...

In your case: 64GB SSD, 240GB SSD, large HDD, what I would do is this:
240GB SSD - Windows OS and all applications
64GB SSD - A game or two...whatever fits within 50GB or so
Large HDD - all that other stuff. Doc, music, movies, etc.
Bonus - the 240GB SSD will probably be a little bit faster than the 64GB SSD.
