I just bought an inspiron 15 7000 gaming laptop. Already upgraded the ram to 32 and have a new hdd and ssd in it. I think the processor is bottlenecking. Is it possible to upgrade, and if so, what can I take it to?

Bottlenecking in what, exactly?
There's no logical cpu upgrade available. The only possible upgrade, the I7-8565U, while it has 4 extra threads, it is overall slower than your current cpu.
So unless you're thread starved in your games, it'll actually be a downgrade.
