For gaming the RAM speed doesn't matter very much. You wouldn't notice a difference for gaming. With things like rendering there would be a measurable difference though.

Unless you plan to upgrade your CPU every year it doesn't matter that you're on a dead socket. What you need to do is to get the best CPU that you can get now and keep it as long as possible. The Core i7 will last you a bit longer because it's a better CPU. By the time you need to upgrade your CPU socket 1151 will be a dead socket too so either way you will need a new motherboard whenever you upgrade.

Performance differences between 4th and 5th gen. are very small. Considering that an i5 is sufficient for your needs, because you consider a 5th gen i5, you should actually go for a 4th gen. i5 4690, 4590, 4570, 4440, 4460 etc. or what fits your needs best.

Not only will the CPU and mainboard be sufficient for anything for the next years, it will also save you a lot of money, which you can either use for more future or present upgrades, or to invest in other things.
