I'm building a postproduction workstation and I would appreciate some advice on deciding which build would be better. I will be using Adobe CC, mostly Premiere & After Effects, no 4K.

1.
i7-7820X 8-Core 3.6 GHz
32GB (4x 8GB) 2666MHz DDR4 ECC

2.
Dual Xeon W-2145 8-Core 3.7 GHz
32GB (4x 8GB) of 2666MHz DDR4 ECC

3.
Xeon E5-2686 v4 18-Core 2.3GHz
64GB (4x 16GB) of 2400MHz DDR4 ECC

I will use GTX 1080 (8 GB) & 500GB SSD, 1TB SSD, 2x2TB 7200

Any advice? I'm googling for the whole day and it seems that the second option could be the best one?

Yep, budget on the CPU/RAM/MB combo. It'a company computer, so all they request from me are basic specs and everything else will be added accordingly. A bit more than average editing, multicam, AVCHD, XD cam, some simple motion graphics, only 1080p.

Does your specific software take advantage of multiple CPU's?

If not, the dual CPU is simply a waste.

I know this post is a month old, but just wanting to point out: the Xeon W-Series processors are single-socket only (i.e. there's no such thing as a Dual Xeon W-2145 system).

From the Intel specs: "Scalability: 1S Only"
