Recently, Internet Exporer has begun to only allow one window open at a
time. If I try to open a link in a new window, it closes the original
window. I can't seem to force it to keep multiple windows open.

Any suggestions would be greatly appreciated.

Right-click on your Desktop Internet Explorer icon and select:
Properties > Advanced and uncheck "Reuse windows for launching shortcuts",
then click "apply".

Nope, still doing it.

If I click on a link that would normally open in a
new window (or Right Click a link and choose Open in a New Window) it opens,
but the original window immediately closes and I cannot hit 'Back' on my
browser.
