Assuming the system recognizes it, you could run a GTX 1660 Super on a motherboard with PCIE 1.1 slots from around 2006.I'm not sure about compatibility as the current motherboard is so old the Asrock site doesn't list any compatible GPUs that aren't 5+ years old. Everything suggests the 1660 Super will work?
You kind of answered your own question. If you are ditching that system in 6 months, why would you not buy a higher end GPU that you will reuse in a new build?I'm ditching this system in six months and will cannibalize the case, PSU, and the GPU. I'm thinking the 1660 Super will give me enough headroom to move to a 3600x based system. So I'd rather not buy a lower spec GPU only to flog it in six months. I should have said as much earlier. I'm just not sure how compatible a 1660 Super will be with my current system?

I don't a problem buying a new GPU. I had a 3570k with a Vega 56 for a while. I'm not saying it's optimal but it did allow me to game at 1080p mid/high or ultra in less demanding games.

A friend just built a new PC with a Ryzen 3600 and a GTX 1660 (non super) and he is perfectly happy playing rollercoaster tycoon(!) and world of warcraft on his 1080p 60Hz monitor.Then you should not upgrade GPU on that CPU if you have Vega 56. unless you want more FPS number on screen..
maybe RTX 2070 or RX 5700xt..
Its not worth to upgrade gpu lower than RTX 2070.

I had to replace it as it died suddenly although my screen is actually WQHD 60Hz. I wasn't really commenting about my system because I want to upgrade. It was more to give the OP perspective on his GPU upgrade.You can play Vega 56 with 1080p 60hz monitor just fine..I still have my 2yr old RX 580 and it still play games at 60+fps @ 1080p.
If you are going with 1440p resolution you would have to go for RX5700xt or RTX 2070 above. to get a stable 70+ fps in most demanding game.
Unless you have a monitor with at least 2k resolution above that when you start replacing your vega56..
