Is a 1060 gaming pc worth it

I don't see waiting for it to die down is worth putting off a build. Especially since it already had a dip a few months ago and people are still mining.

But you may want to wait because supposedly within 2 months Nvidia shows off their "new GPUS" which would change the demographic of GPU's.

Prices of GPU are around 110% of MSRP. $320 USD == 422.368 AUD, so you're not getting a bad deal there.
for the price I would change 2 thing:
wifi card. REALLY ? if you use that thing wifi speeds will be embarrassing slow. you need
1. up and away from case.
2. something with antena big enough for desktop (you really cannot use 10x faster cable in desktop ? ) Panda Wireless PAU06

consider another SSD:
1. 120 GB are ALWAYS slower than 256 and bigger.
2. if you use m.2 why not utilize ALL possible speed and stay around sata ?

my wifi is so slow that facetime will crash it but i may try to use a cable if i can just to be sure however with the ssd i am only going to use it for windows and a few games and may upgrade later

your power supply is under powered for a gaming rig. you want a 650w unit so that under gaming load your rig wont lock up or shut down.
