If I understand right spilling coffee on a Macbook Air can seriously damage the keyboard or other hardware components. How likely is it that the innards of the hard drive would be effected so badly that data stored on the hard drive would also be lost?

Solution
Simple answer is probable but the first thing that might see damage would be the motherboard/logic board in the Mac, then the storage, probable from a short induced by spilled liquid. Depending on your model, you might loose the M.2 SSD or the HDD in the Mac.
