So I recently replaced me single channel 8gb ddr3 1600mhz ram with 16 8gbx2 ddr3 1866mhz ram. When I booted up my pc and check task manager it said the speed was 1600mhz but definitely said 2 of 2 slots used and 16.0gb ram.

I went into the bios of my pc and changed ram from 800 1600mhz to 933 1866mhz (I believe it was not on auto and just set to 800 1600mhz) is this ok or will my pc not be able to handle this.

You have to check if your motherboard is able to handle those speeds, if you were able to set it to 933 FCLK and 1866MHz memory speed with no issue on bootup, daily usage then it should be fine. Run memtest64 to confirm the RAM is stable if you're worried.
