Is the 5800x or 3900x better at video editing?
If the 5800x is better, is it worth $50 more? Also I'd have to buy a cooler for it which would be another $40 on top of that..

Comparative performance in CB23 should tell you the story...look at both single thread and multi-thread performance. 3900X's 12 cores definitely outperform it in MT benchmarks, but it's ST results suggests any application the fails to fully utilize all cores will make a 5800X the better processor for you.

So it makes sense to me that how it performs in your specific use case will depend on your software, how well it leverages extra cores and if you use any GPU assist. Video editing, for instance, might not fully...
The 4 additional cores on the 3900x will make it a better choice for video editing.
The extra cores allows the 3900x to perform better of multithreaded video editing workloads.
In multithreading scenarios it doubles to 24 simultaneous threads available for processing.

ADDED: really the worst part about the 5800X is it's performance doesn't really justify it's price position relative to a 5900X and 5600X. Been much talked about...and almost universally despised for it. But then, it's also about the only Zen3 processor I've seen actually in stock at my local Microcenter.
