I'm buying a pc and not cutting any corners, is this a high end pc build? Run all games @ max settings etc and future proof? And would anyone change any of the hardware to something else?

4.0 GHz Intel Core i7-6700K Quad Core
32GB of 3000 MHz DDR4 RAM
NVIDIA GeForce GTX1080 with 8GB GDDR5X
240GB SSD + 2TB 7200 rpm SATA 3 HDD
1 x Gigabit Ethernet Port
USB 3.0 / USB 2.0 / DVI / HDMI / DP
USB Gaming Mouse & Keyboard Included
Windows 10 Home (64-bit)

No pc is future proof and nobody can say about future requirements. And max settings is very vague, as this highly depends on the game. Some games are VERY hungry for highest ingame settings. And it also highly depends on the FPS you want achieve and the resolution makes a very big difference. The graphics card is very good and the cpu too. If you really talk about high end pc today, then at least 1 TB SSD should be there. In the listing some other parts are not listed, like the psu and motherboard model and the case. The fans could be very loud and the psu could be very cheap. Also mouse and keyboard models are missing. I don't know what to change there, as we don't know your budget and what all parts costs in detail.

For the...
Yes very, except there's no motherboard listed, and you may need a slightly larger SSD eventually if you plan to install programs/games on it. Future proof is a controversial one though lol.. and the RAM listed is quite non-specific too. Check the MB supports the model you intend to use ideally.

For the performance question, I would say you could play any current game at its highest settings on a 1920*1080 pixel monitor (full hd) with at least 60 fps. Even at resolution of 2560*1440 pixel you should be able to do that, besides one or two games. But at 4k resolution, you can forget this. This is not enough to play every game at its highest settings, if you want achieve 60 fps or higher. And there is nothing like a future proof thing (and also it depends on the time you want future proof something).

Here are some benchmarks:
