Wait till next week to see what AMD releases for their new CPU. The motherboards will be upgraded quite nicely as well (in comparison to what's available now in capability)

You should also be looking to get a gtx1070ti minimum.

500gb SSD will be much better.

You will definitely get more than 100 fps in this system even after streaming.
8600K is good enough for the recent games launched. You will have no worries.

RX580 is on par with 1060 and freesync monitor is much less expensive than gsync ones.
