I am looking to upgrade my PC and monitors in order to run some of the newer games on max and do a little bit of streaming. I'm not really sure about the motherboard and the 1080 card so could i get some input on that?

FYI- I'm only getting the water cooling because someone is giving it to me for free.

Here is my current build:

Few words.

Reason why i picked different RAM: http://www.tomshardware.com/reviews/best-ram,4057.html
Reason why i picked different PSU: http://www.tomshardware.com/reviews/best-psus,4229.html
As far as MSI GTX 1080 Gaming X 8GB goes, here's in-depth review to read: https://www.guru3d.com/articles-pages/msi-geforce-gtx-1080-gaming-x-8g-review,1.html

If the Seasonic PSU is too pricey for you, you can switch the PSU back to your EVGA.
