Looking for a great mini itx build which I will be using for gaming and video editing. I was looking at the Bitfenix Prodigy, and Cosair 250D for cases but any recommendation is appreciated. I plan to run all the modern games at 1080p to 1440p resolutions, any monitor/peripheral choices would be good also!

I think you could get better for your money. This is the same size as the 250D and Prodigy, although it will perform much better,

Is the 4 threads on the i5 good enough for editing. Like I'm not extremely fussy, but I do want the ability to do some editing in the future, as well as a few animation programs as well. :)
 
Switch the i5 for the Intel Xeon E3-1231V3. It has 8 threads for all of your video editing needs, and performs slightly better than the i5.

The only problem with that processor is that it will bring your price up to $1270ish.
