This past Christmas I got a rtx 2080 but still have an i7-6700 and I'm looking to upgrade soon. I've had my eye on the i7 8700k for a while but the price is lot. I was browsing and I saw the i5-9600k. I watch some bench marks and I saw that for the almost $100 difference the I5-9600k seems like a good deal. I plan on doing video editing and gaming and was wondering for this price would the i5-9600k be the better option?

I5 9600 should be good. The z390 motherboard is going to cost around 100 which is enough for the i7 8700k but your anyways going to have to spend around 100 for thei7's motherboard which is a z370.

The i7-6700 is still a pretty decent CPU. Unless you are really struggling due to CPU in some games, I'd just tough it out for another 2-4 months to see how Ryzen 3000 pans out. If rumors are remotely true, Intel's already passable bang-per-buck is going to get destroyed, especially if you do more heavily threaded stuff on the side like video editing.
